Sunny Fried Green Corn Tamales

Makes: 2 servings

  • 2 tablespoons of olive oil (or enough to create a light coating on the pan)
  • 2 green corn tamales - steamed
  • 2 eggs
  • Salsa

Heat a pan on medium high. When hot, add olive oil and then smash the steamed tamale in the pan.

Fry it for 3 minutes on each side, it should get crispy and golden brown. When you flip the tamale start your two eggs in an egg pan. They should take about 3 minutes (I cook mine sunny side up, you can cook them anyway you prefer).

Place the tamale on a plate, top with the sunny side up eggs and drizzle on as much salsa as you like.

Mainly onion tomato jalapenos cilantro,and lime juice and a little salt. Watch the salt. It will make it hotter. Jalapenos to your taste.
