Tamale Stuffed Peppers

Ingredients:

  • 2 Bell Peppers
  • 3 of your favorite Tucson Tamales (Red Chile Pork was used in pictured dish)
  • ½ Lime Juiced
  • ¼ Cup of Cilantro
  • 1tsp Minced Garlic
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Smoked Paprika
  • ¼ Green Onions
  • 1 ½ Cups of Cheddar Cheese split up
  • ¼ Cup Queso Fresco

Directions:

  Preheat the oven to 320 degrees. Cut your peppers in half and clean out seeds. For the filling, dice up your three heated tamales and add the lime juice, cilantro, garlic, 1 cup of the cheddar cheese, green onions and spices. Mix this to create the filling. Scoop filling mixture into the pepper halves, topping off with the remaining cheddar cheese. Cover the peppers with foil and bake in the oven for 30 minutes. Remove from the oven and remove the foil. Sprinkle the tops with queso fresco and enjoy fresh!
