Tamale Stuffing Recipes

 A few days before Thanksgiving four years ago, a customer shared with us that she was buying tamales to use as a stuffing for her Thanksgiving Turkey.  She came back after Thanksgiving super excited and proclaimed it was the best stuffing she had ever made.  We asked her what her secret was and she said, “No secret, I just took the tamales and stuffed the bird!”  Every Thanksgiving thereafter, we have had several customers use tamales to create Thanksgiving Stuffing.

So, we decided to make some recipes to share with our loyal customers.  You can try our recipes or create your own.  We added some broth to the tamales for a little extra moisture.  Of course, you can skip the turkey all together and just enjoy the tamales.

Stuff your Turkey

The following recipes assume you are cooking a 20 pound turkey.  Adjust as needed.

Remove cold tamales from their husks.  Break apart the tamales in a bowl and add stock.  Then simply stuff your bird and let the oven do the rest of the work.

Sonora Stuffing

8 Sonora Tamales (green chile chicken)

2 cups chicken stock for oven stuffing

"OR"

1 cup Stock for in the bird stuffing

Green Corn Stuffing

12 Vegan Green Corn Tamales

2 cups chicken stock for oven stuffing

"OR"

1 cup Stock for in the bird stuffing

Thanksgiving Tamale Stuffing

8 Thanksgiving Tamales

2 cups chicken stock for oven stuffing

"OR"

1 cup Stock for in the bird stuffing

Curry Stuffing

5 New Delhi Tamales

3 Puerto Rico Tamales

2 cups chicken stock for oven stuffing

"OR"

1 cup Stock for in the bird stuffing

Oven Stuffing

Remove cold tamales from their husks.  Break apart the tamales in a bowl and add stock and mix well.  Put the mixture in a lightly oiled 9 x 12 baking dish.  Pat the mixture so that it is level.  Baked uncovered at 350 degrees for 35 – 40 minutes.
